The experience
The Chef's Table began as the staff meal — the plates cooked after service, when the grill was still hot and the kitchen finally had time to play. Guests kept asking to sit in. Now eight of them can.
Why eight seats
Eight is the number the counter holds without anyone having to lean. It keeps the cooking honest and the conversation single-threaded.
