Peas means beans

In Jamaica, peas means red kidney beans or gungo peas, simmered together with the rice rather than served beside it. Coconut milk, thyme, scallion and whole pimento berries season the pot.

Despite the name, the peas are beans — usually red kidney beans or gungo peas.

How we cook it

We cook ours in coconut milk with thyme, scallion and whole pimento berries, so the rice arrives seasoned through rather than plain underneath the main.
