One berry that tastes of several spices at once, and the backbone of Jamaican cooking.
One berry, several spices
Pimento is a small, dark dried berry. Crush one and it smells like several warm spices at once — clove, cinnamon and nutmeg in a single berry.
In Jamaican cooking
Pimento is the aromatic base of jerk seasoning, and it seasons oxtail, curry goat, escovitch pickle and stews.
Whole or ground
Whole berries for long braises and pickles, ground for marinades and rubs. Ground pimento fades quickly, so it is worth buying small.
