What Is Jamaican Jerk?
Jerk is a Jamaican cooking method and a seasoning, built on pimento, scotch bonnet, thyme and scallion, and cooked slowly over live coals so smoke becomes part of the flavour.

Seasoning and method, together
Jerk is two things at once: a seasoning built on pimento (allspice), scotch bonnet, thyme, scallion and ginger, and a way of cooking slowly over live coals so smoke becomes part of the flavour. Take away the smoke and you have seasoned chicken.
How it should taste
Warm and aromatic before it is hot. Allspice and thyme first, then the pepper. Heat without that aromatic base is just spice.
A note on pork
Jerk Harbour does not serve pork. We cook chicken and wings only.
